Release of Polars 2.0

Polars 2.0 introduces out-of-core spill-to-disk support, significant performance improvements, and first-class SQL support, allowing it to outperform DataFusion and DuckDB on TPC-H and TPC-DS benchmarks. The release also adds a new Map dtype and stricter dtype handling for faster feedback and AI iteration.
